Preparation time is 10 minutes, and cooking time is 15 minutes.

Ingredients

  • 3 Eggs
  • 5-6 Green peppers (sweet - spicy as desired)
  • 5 medium tomatoes (4 if large)
  • 1 medium onion
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • Red pepper flakes
  • Black pepper
  • Salt (1 teaspoon)
  • Half a tea glass of water
  • Optional cheddar cheese

Preparation

  • Wash the tomatoes and green peppers. (Peel the tomatoes if desired.)
  • Finely chop the onion. Remove the seeds from the peppers and chop them.
  • Finely chop the tomatoes.
  • Add the vegetable oil and onions to the pan where you will make the menemen.
  • On low heat, when the onions turn pink, add the chopped peppers to the pan.
  • Stir occasionally. When the peppers start to lightly fry, add the tomatoes.
  • Close the lid of the pan and let it cook.
  • When the tomatoes are completely crushed and have released their water, add half a tea glass of drinking water. (If your tomatoes are very dry, you can add 1 tea glass of water.)
  • Close the lid and boil the water for about 2-3 minutes.
  • Then add the butter to the pan and stir until it melts.
  • When the butter melts, crack the eggs into the mixture.
  • Without completely mixing the eggs, slightly distribute the yolks into the mixture.
  • Cook for a few more minutes.
  • Add salt and, if desired, spices such as black pepper and red pepper flakes.

Your menemen is ready. You can enjoy it.

If the tomatoes and peppers used for menemen are used in season, i.e., in the summer months, your industrial menemen will be more delicious. If you are making this menemen in the winter months, you can use tomato preserves prepared in the summer as an alternative. You can add different cheeses entirely according to your preference. We also recommend trying it by adding grated cheddar cheese towards the end of cooking. You can omit the onion according to your taste. If you have a copper or cast-iron pan, it will be more delicious. 1 full tablespoon of industrial menemen is approximately 28 calories.
